Caramelized Crispy Snack Mix


My friend, Kathy, brings this delicious snack mix to every class party BY REQUEST!  It's completely delicious and, unfortunately, COMPLETELY ADDICTING!  I customized it for Ella's Pink Party by using pink and white M&M's, which I found at Party City.  Vary your M&M colors to make this a delicious and festive treat!

Caramelized Crispy Snack Mix

9 cups Rice Chex cereal
9 cups Corn Chex cereal
2 cups packed brown sugar
1 cup butter
1/2 cup light corn syrup
1/2 teaspoon baking soda
2 cups candy coated chocolate candies (a.k.a. M&M's!)

  1. Heat oven to 250 degrees.  Spray a large roasting pan with cooking spray.  Measure the cereal into the pan.
  2. In a 3-quart saucepan stir together brown sugar, butter and corn syrup.  (WARNING:  Resist the urge to use a smaller pan - the baking soda makes it bubble up!) Cook and stir 8-9 minutes over medium heat until mixture heats to boiling.  Boil 1 minute, stirring constantly.  Remove from heat.  Stir in baking soda.  Pour over cereal mixture, stirring until evenly coated. 
  3. Bake 40-50 minutes, stirring every 15 minutes, until coating is set.  Cool 5 minutes; stir in candies.  Spread on parchment paper to cool, about 10 minutes.  Break into pieces.  Store in an airtight container.

I like this combination because the cereal is my favorite part. I don't like to be slowed down with nuts or pretzels. Plus, it's really versatile and you can switch it up with seasonal M&M's. I love it! Thanks for sharing on Sweet Indulgences Sunday.

Happy New Year!  We are off to a cold start! It's so cold that the Governor cancelled school for the entire state! That never happens. Dr. Seuss Snacks!

One fish, two fish, red fish, blue fish.  I admit it.  I love Dr. Seuss!  A collection of these sing-song-y rhymes was the first thing I put on the bookshelves of our very first baby nursery.  Four kids later, I now have talents that include being able to recite The Cat In The Hat from memory! In honor of the late great Dr. Seuss (He would have been 107 on March 2nd) we are making these cute snacks!  Absolutely no skill or talent required! Simply start with a box of blue Jell-O..... and divide into four clear plastic cups. (The fish have to have a place to swim!) After the Jell-O has set, have the kids add their own fish!  (Swedish Fish, that is!) Ella's kindergarten class gets a Dr. Seuss party after they have collectively read 107 books! Groundhog Pudding Cups

Now that we are back living in The North, I'm starting to remember why, prior to my life in The South, I had only had a handful of pedicures and didn't own any sandals.  Exposing one's feet presents health risks.  Like frostbite. Groundhog's Day (February 2nd) is just around the corner. At this time, as legend has it, the groundhog will either emerge from its hole on a sunny day, see its shadow, get scared, and hide leaving us with six more weeks of winter, or it will emerge on a cloudy day, see nothing noteworthy and predict an early spring.  Sunny or not, a package of Pepperidge Farm Milano's was all the inspiration I needed to celebrate the impending season.
