Mint Filled Brownie Cupcakes



I have a confession to make.  I've never made brownies from scratch.  I know, it's shameful, being a baking enthusiast and all.  I just never thought anything could actually top that giant box of Ghirardelli Triple Chocolate brownie mix at Costco!

If only I had known how easy they are to make.  I mean really easy.  Only one bowl required!


Just melt a stick of butter and 8 ounces of semi-sweet chocolate over a double boiler  in the microwave.


Whisk in sugar and salt.


Add eggs and whisk again.


Whisk in cocoa powder and flour until just blended.

See how easy that is?



To make the Mint-Filled Brownie Cupcakes, unwrap 12 mini York Peppermint Patties.


Put one tablespoon of batter in the bottom of 12 lined cupcake tins.
Top with one peppermint patty.
Top that with the remaining batter.

How easy is that?


Bake at 350 degrees and Voila!  
The peppermint fills the brownie cupcake with a delightful surprise!

Yowser! these look amazing! Brownies are so easy to make, it's true, but I still do love the Ghiradelli triple chocolate mix from Costco sometimes! :)
I may try this idea with my homemade peppermint patties. I just can't resist anything in cupcake form.

Wow, saw these on Jane Cooks (Jane Deere)'s Fusion Fridays and holy cow they look delicious! While I have made brownies from scratch before, I am still in the Ghiradelli's from Costco camp... but maybe these can change my mind!
