Peanut Butter and Jelly Cupcakes


It's a classic combination -  Peanut Butter and Jelly.  It's sweet and salty, nutty and fruity.  As a twist on this back to school treat, these cupcakes from Martha's Stewart's Cupcakes, did not not disappoint.


The cupcake batter was thick, but packed lots of peanut butter flavor.  I omitted the extra chopped nuts because, while I like nuts, I don't like crunchy interrupting my soft, tender sweets.  It's a texture thing I just can't get past - like the occasional jello with celery that would turn up at the church basement potlucks.


I decided that a dollop of Jelly on the top of the frosted cupcake just wasn't enough, so I scooped a well out of the cupcake and filled the peanut butter cupcake with jelly as well.


The piped on peanut butter icing went right on top.

Speaking of icing, I knew from the start that 1/3 of a cup of powdered sugar just wouldn't be enough. While I appreciate a dessert that's not-too-sweet, I didn't want to feel like I was eating peanut butter out of a jar.  A full cup of powdered sugar did the trick.


Strawberry jam glistens on top -


and packs some extra punch in the middle.

All in all, I thought this was a very tasty cupcake packed with Peanut Butter and Jelly flavor.

What a great idea to put the jelly inside. I thought these were a little dense and even a bit dry. Putting some jelly inside would have really helped. If I make these again I am totally going to do that. As always, I love your pictures!
